It is distinctive from other Japanese green teas because it is roasted in a porcelain pot over a charcoal fire, whereas most Japanese teas are steamed. The tea is fired at a highĀ temperature, altering the leaf colour from it's traditional green to reddish brown.
HÅjicha infusions have a light to reddish brown appearance and are less astringent due to losingĀ catechins during the roasting process.
The roasted flavours come through and give this tea a distinctive caramel like flavour.
Because of its mildness, HÅjicha is a popular tea to serve during the evening meal or after, before going to sleep.
